Zucchini “Pasta”


This dish is so versatile, it can be served as main dish, side dish, vegetarian, low carb, or add any kind of protein. Today I’m having Zuchini “Pasta” for lunch. It is very light and I love the aroma of the fresh basil.

Zucchini “Pasta”

Serves 2



2 Tablespoons of Olive Oil

2 Medium Zucchinis

4 Crimini Mushrooms

1 Cup of Cherry tomatoes (you can combine 1/2 red and 1/2 yellow)

1/2 Cup of Fresh Basil

4 Oz Parmesan Cheese

You will need a spiralizer


Run the zucchinis trough the big grates of the spiralizer. Cut the tomatoes in half. Slice the crimini mushrooms and give a rough chop to the basil.




In a sauté pan over medium-high heat, warm the olive oil. Add the zucchini, mushrooms, tomatoes, cook stirring occasionally until vegetables are just tender, about 8 minutes. Add the basil and stir until the basil turns bright, about 1 minute.


Serve and shred the parmesan cheese over the pasta.




Mmmmm… Smells soooo good!

  1. Looks delicious!!! What if the basil is from your own garden? Next time you visit I am gona make sure you take some seeds from my italian basil plant. Thanks for the healthy advice.
