Roasted Tomatillo Salsa


November the 20th is the celebration of the Mexican Revolution. It took place in 1910, the people rose up in arms against the President Porfirio Diaz who had been in power for over 30 years. Inspired by my country, I decided to cook a Spicy Tomatillo Salsa. This salsa will add flavor to your quesadillas, tacos, sandwiches, nachos, eggs, and you name it!


Roasted Tomatillo Salsa




6    Tomatillos

3    Serrano chiles

1    Garlic

1/4 Onion

1    Tablespoon of Olive Oil

Salt to taste



Remove husks from the tomatillos and rinse under warm water to remove stickiness. On a skillet roast the tomatillos, serrano chiles, onion and garlic.



Turn them so they roast all around.


When the chiles are browned all around put them in a plastic bag so they sweat. Some may be ready before others. This whole process will take about 30 minutes.


Under running water, peel the thin skin from the chiles. When you finish wash your hands, you don’t want to end up with chile in your eyes!


Blend all the roasted vegetables.


In a sauce pan, heat the olive oil and add the blender mixture. Add Salt to taste and boil for 3 minutes.
