I bet you’ve heard breakfast is the most important meal of your day. Well it happens it is my favorite too! Here is a great way to start your day. My Eggs Benedict are very different, healthy, light and most importantly, delicious!! Try them, they are very easy to cook!
1 Whole Grain English Muffin
2 Slices of Canadian Bacon or Smoked Salmon
1/4 Cup of Plain Greek Yogurt
1 teaspoon of Dill Weed
Mix the Plain Greek Yogurt and the Dill Weed. Set aside.
Saute the slices of canadian beacon while you toast the english muffin.
Poach the eggs. if you prefer you can do fried eggs instead, just make sure you don’t cook the yolk.
Layer the english muffin, then the canadian bacon (or the smoked salmon) and lastly the egg. Top with the yogurt mixture.
