Chasing The Sun

Well Ricky is going to warmer weather. He needs to train and here is too cold to be on his bike. So in other words, he is chasing the sun. Last night we prepared a healthy homemade granola for him to take on his trip. It is so good, so delicious, with no refined sugar added, low-fat, gluten-free, full of grains, just good nutrients for you, and with wonderful flavors. What more can you ask?

You can enjoy granola in so many ways. You may have it with cold milk as a cold cereal, with hot milk as a warm cereal, with fruit and yogurt, just by itself as a snack or even over your ice cream! Feel free to change the added nuts or dried fruit. Customize it to your taste.

HEALTHY HOMEMADE GRANOLA

Ingredients

4    Cups rolled oats

1/2 Cup brown sugar

1    Cup unsweetened coconut flakes

1/2 Cup maple syrup

1/4 Cup cold press apple juice

1    Ripe banana

1    teaspoon vanilla

1/2 Cup pecans

1/4 Cup walnuts

1/4 Cup macadamia nuts

1/4 Cup pistachios

1/4 Cup Cashews

1/4 Cup pumpkin seeds

1/4 Cup dried goji berries

1/2 Cup mixed dried berries

  • Preheat the oven to 300º F
  • In a large bowl combine the oats, brown sugar and the coconut

  • In a blender, puree the banana, maple syrup and apple juice

  • Add the blender mixture to the oats bowl and stir until it is well combined

  • Spread the mixture on a cookie sheet

  • Bake for 45 minutes stirring every 15 minutes
  • Add the rest of the ingredients excluding the dried fruit. Bake for 15 minutes, stir and bake for another 15 minutes.
  • Add the dried fruit and mix
  • I recommend to keep the granola in the refrigerator
