This morning I saw my bananas getting ripe, great! I can do lots of things with ripe bananas. One of my favorite is this simple pancake recipe which is made in no time, no mess. The ripe bananas give the natural sweetener to this recipe so you don’t have to add any more sugar. Can’t believe I didn’t used to like bananas! They used to be sitting there getting ripe until I started to experiment with them. So give it a second thought before you trow away ripe bananas!
This is low sugar, low-fat, gluten-free, vegetarian and of course, delicious!
RIPE BANANA PANCAKES
Serves 1
Ingredients
1 Ripe banana
1 Egg
2 Tablespoons 1-minute quick oatmeal
1 Tablespoon plain greek yogurt
Cooking Spray
Procedure
- In a bowl smash the ripe banana
- Add the egg, yogurt and the oatmeal and mix until they are well combined
- Spray a single fry pan with the cooking spray
- Pour in 1/3 of the mixture and cook for about 2-3 minutes on each side. Cook the rest of the mixture ( 2 more little pancakes)
- Enjoy with maple syrup
Care for Chocolate? Add 1 Tablespoon of cocoa powder to the mixture and do the same procedure. You’ve transformed the pancakes into a chocolate banana nut version. So good, my favorite!
