Bruschetta for Lunch


You are running around, it’s late and you need a quick lunch! Well I have the answer for you! A Prosciutto Bruschetta, It is the easiest, fastest and delicious bruschetta you’ll ever taste. It is so versatile that can be served as an appetizer, lunch, cut it in four and it turns into finger food.

I gave this to my family for lunch accompanied by a salad and everyone loved it. I’m sure you’ll love it too.


Serves 2



2 Slices of Bread

4 Oz Brie Cheese

1  Cup of frozen quarter artichokes hearts

4 Slices of Prosciutto



  • Toast the slices of bread
  • Layer all the ingredients, starting with the brie cheese then the artichokes and finally the prosciutto



  • Put them under the broiler for 3 minutes

Isn’t that easy!!! Enjoy with a side salad, a cup of soup or just by themselves!
