Baked Eggs

Today it is so cold out there that I needed a comfort food breakfast. So I went to my roots and prepared some mexican style baked eggs. Some ingredients typical in Mexican recipes are: tomato, onion, chile (serrano) and garlic. I used some fresh herbs and immediately all the aromas started to warm up my kitchen and my home. And soon enough my tummy too! This is the perfect breakfast for the weekend!

MEXICAN STYLE BAKED EGGS

Makes 3 eggs

Ingredients

OLYMPUS DIGITAL CAMERA

 

3 Eggs

2 Medium tomatoes

2 Garlic cloves

1 Serrano chile

1/2 Onion

2 Thyme sprigs

2 Marjoram sprigs

2 Oregano sprigs

Sea salt to taste

 

Procedure

  • Preheat the oven to 350º F
  • Prepare your veggies
  • Clean the serrano chile by cutting off the vains and seeds

  • Chop the onion, tomato, serrano chile and garlic.

  • In a medium size pan, heat 1 tablespoon of olive oil
  • Cook the onion, garlic and serrano chile until the onion becomes translucent. Stir frecuently

  • Add the tomatoes, herbs and salt

  • When the tomatoes are cooked, transfer to an oven safe pan

  • Crack 3 eggs on top

  • Bake for about 14-15 minutes of until desired egg consistency
