Green Chile Egg Muffins

This green egg muffins are loaded with protein, fiber and flavor! Very simple, Green chiles and cilantro add such a great seasoning that they don’t need anything else. Spinach add vitamins, iron and fiber. Eggs add the protein that you need to start you day. I find egg muffins so convenient because they keep for several days in your refrigerator and you can pop them in the microwave to have a healthy quick breakfast. They make a very healthy snack too!

GREEN CHILE EGG MUFFINS

Ingredients

OLYMPUS DIGITAL CAMERA

Makes 6 Muffins

6 Eggs

1 Cup chopped spinach

1/2 Chopped green chiles

Little bunch of cilantro

Salt and pepper

 

Procedure

  • Pre-heat oven to 350 º F
  • Put all the ingredients in a bowl

  • Whisk until everything is combined

  • Season with salt and pepper
  • Lightly coat a muffin tin
  • Evenly pour the mixture into 6 muffin cups

  • Bake for 15-18 minutes

  1. I’d have to put a few jalapeños, onions, cheese, and chopped mushrooms in mine,,, yummy , they are like mini frittatas,,you’re right they are great to have on hand. I make a big one in my iron skillet, similar to how I do my huevos rancheros,,I should post it,,😀😀
