Stuffed Bell Peppers

This stuffed bell peppers are so good, they are easy to make and they look so pretty!  They work very well for a regular family dinner or they present great at your next reunion. They can be made ahead of time and just reheat them at your convenience. I’m sure you are going to like them as much as I do!

STUFFED BELL PEPPERS

Ingredients

Serves 2

OLYMPUS DIGITAL CAMERA

 

1/2 Lb lean ground beef

1/4 Onion + 1 slice

1   Tomato

1   Potato

1   Garlic clove

1   Tablespoon Olive oil

Salt and Pepper

 

Procedure

  • Preheat the oven to 350ºF
  • Cut in half the Red Bell Peppers and cut out veins and seeds

  • Put the red bell peppers in an oven safe pan and roast them in te oven for 30 minutes
  • While the peppers roast, Dice 1/4 onion, garlic and potatoes
  • Heat olive oil and saute the onion and garlic until it becomes translucent

  • Add ground beef and stir
  • In a blender, blend tomato and the slice of onion

  • When the meat is browned, add the blender contents

  • Add potatoes

  • Season with salt and pepper
  • Cover and let it cook for 5-10 minutes until all the juices dry

  • Stuff the roasted peppers with the meat

  • Put the stuffed bell peppers in the oven for 5 minutes and enjoy!

I served the stuffed bell peppers with a side of roasted mix of broccoli and cauliflower
