Light Black Cod

Last night I prepared this light dinner for my daughter who is going back to school, her spring break is over. It was lovely to have here at home with us. Now it is my son’s turn. It is so sad that their vacation is always in different weeks. But that’s the way it is and I am happy that I get the chance to spoil them for a little bit. Maybe this way all my attention is focused in one of them at a time!

This is such a light dinner, it is very easy to prepare. full of nice aromas, nutritious, low-fat, low-carb, gluten-free, paleo. Give it a try, I know you’ll love it!

BAKED BLACK COD

Ingredients

Serves 3

OLYMPUS DIGITAL CAMERA

3 Black Cod fish filets

1 Leek

1/4 Cup black olives

1/2 Cup cherry tomatoes

1 Bunch Fresh Basil

1 Lemon

Olive oil

Salt and Pepper

 

Procedure

  • Pre-heat oven to 350º F
  • Finely slice the leek, roughly chop basil and cut in half the cherry tomatoes

  • Lay the fish filets on an oven safe baking dish
  • drizzle with olive oil
  • Season with salt and pepper
  • Place leek, tomatoes, basil and black olives on top of fish filets

  • Cover with aluminum foil and bake for 15-20 minutes or until the are fully cooked

  • When served, squeeze some lemon juice
  • I had it with some roasted broccoli
