Chicken with Leeks, Sundried Tomatos, Mushrooms and Rosemary

This recipe came out of the blue, and I really, really liked it. It has all the ingredients I like. As all my recipes it is simple, easy and delicious. The aromas while cooking and while eating are so great, I barely waited to be ready!

Plenty of vegetables, you can have your dinner prepared all at the same time. Better, slow cooker will do it for you!

 CHICKEN WITH LEEKS, MUSHROOMS, SUNDRIED TOMATOES AND ROSEMARY

ingredients

OLYMPUS DIGITAL CAMERA

 

6 Chicken thighs

6 Medium leeks

6 Crimini mushrooms

6 Halves Sundried tomatoes

3 Rosemary twigs

Salt and Pepper

 

Directions

  • Thinly slice leeks and mushrooms

  • Chop Sundried tomato
  • Place sliced leeks on bottom of slow cooker

  • Add the mushrooms

  • Then the sundried tomatoes and the rosemary

  • Place the chicken thighs on top of vegetables
  • Season with salt and pepper

  • Slow cook in medium-high for 2 hours

  • Serve two thighs with a share of vegetables
