This is a salad that is perfect for this spring days. Very refreshing! Panela is a white, light, fresh cow’s milk cheese. Combined with tomatillos, cilantro and lime juice becomes a delightful salad or a great appetizer. Serve it over corn tortilla chips and top it with salted yogurt.
TOMATILLO PANELA SALAD
Ingredients
4 Oz Panela cheese
5 Medium tomatillos
2 Limes (juice)
Bunch of fresh cilantro
1/4 Cup Plain greek yogurt
Salt and Pepper
Directions
- Finely chop cheese, tomatillos and cilantro
- Add lime juice, salt and pepper and combine
- Season plain greek yogurt with salt and pepper
- Serve over corn tortillas and top it with the yogurt

This looks amazing! So fresh and REFRESHING! Of course, I live in the South, but where do you find those rectangular blue tortilla chips?
