CAULIFLOWER CRUST PIZZA AND TOMATO SAUCE
Ingredients
For the crust:
1 Cauliflower head
2 Eggs
1 Cup Shredded Asiago Cheese
1 Tablespoon dried Basil
1 Tablespoon dried Oregano
1 teaspoon garlic powder
For the sauce:
1 Large can of whole tomatoes
3/4 Red onion
3 Garlic cloves
3 twigs fresh Oregano
3 twigs fresh Thyme
1 teaspoon Smoked paprika
1 teaspoon Red Pepper flakes
Salt and Pepper to taste
Toppings:
Fresh mushrooms
Olives
Sliced jalapeño peppers
A little shredded parmesan cheese
Directions
- Preheat oven to 400º F
- Chop onion and garlic
- In a sauce pan, Sautee chopped onion and garlic
- Add Tomatoes
- Brake the tomatoes and on low heat, let it simmer for about 30 minutes, stirring occasionally
- When almost done, add fresh herbs, paprika, red pepper, salt and pepper
- Meanwhile in a blander or food processor pulse cauliflower in batches until it has a rice appearance. I did it in 3 batches
- Put the cauliflower “rice” on a cheese clothe a squeeze to drain water
- Shred Asiago Cheese
- In a bowl combine cauliflower, Asiago cheese, eggs, dried oregano, dried basil and garlic powder
- Line a baking sheet with parchment paper
- Spread the cauliflower mixture forming a crust
- Bake on the top shelf of oven for 40 minutes or until is golden brown
- Take out of oven, spread salsa and the toppings of your choice
- Sprinkle little parmesan cheese
- Put it back in the oven for 5-10 minutes
- Enjoy!
