Pistachio lime cheesecake

The combination of lime and pistachio is so delicious in this cheesecake. It has just the right amount of sweetness, for the ones who prefer the lemony sour flavor dessert.

PISTACHIO LIME CHEESECAKE

Makes 6 individual cheesecakes

Ingredients

OLYMPUS DIGITAL CAMERA

6 Belgian Waffle Bisquits

1/4 Cup Shelled Pistachios

1/4 Cup Plain Greek Yogurt

1   Teaspoon Honey

1   Cup Ricotta Cheese

1/2 Cup Mascarpone Cheese

1/4 Cup Maple Syrup

1    Egg

The juice of 1 lime

Chocolate candid ginger for garnish

 

Procedure

  • Pre-heat oven to 350º F
  • Process the biscuits, pistachios, yogurt and honey

  • Split the mixture into 6 individual size ramikens to form a crust

  • In a bowl mix the ricotta cheese, mascarpone cheese, maple syrup and lemon juice
  • Add the egg

  • Fill the ramikens with the cheese mixture

  • Bake for 45 minutes at 350º F

  • Chop the chocolate candid ginger
