All Natural Banana Nut Chocolate Ice Cream


This is the simplest ice cream you’ll ever make. So easy and… healthy! Yes healthy! It has absolutely no sugar added, just the natural sweetness from the bananas. So yes, we can have a little healthy delicious treat.

It is made out of frozen ripped bananas, cocoa powder and pecans.

Gluten free, dairy free, vegetarian, vegan, paleo.

I’m sure you can create lots of different combinations with the same banana base. Be creative! But try this one first!

Happy Birthday My Dear


Happy Saint Patrick’s day!! I love Saint Patrick’s day, I feel it is a festivity full of energy, positiveness, happiness, proudness, brightness, or maybe it is just the luck of the Irish! Most of all it is my husband’s birthday! I wanted to prepare something very special for him. I know he really likes cheesecake, so I decided to go with this version that I created. Something green to go with Saint Patrick’s theme, something tart I didn’t want it to be over sweet and of course what can be better than cheesecake!

Flourless Almond Macadamia Muffins


It has been a while since I don’t bake. It is snowing and gray, so with this kind of weather I’d love to have a hot cup of coffee with a nice nutritious muffin.

Yesterday morning  my little puppies ( I have two 3 lb Chihuahuas) were urging me to take them out. They didn’t understand it was cold and snowing. It was so cold that Rhea didn’t want to step outside the door mat and Romulo who is more adventurous, walked about 6 feet away when he started limping on one leg and then another leg and before he could come back to the mat he wasn’t able to walk. This happen in a matter of seconds. I carried both of them and went in side. They spent the rest of the morning next to the fire-place.

This muffins are delicious! Only good things in there like almonds, macadamias, coconut flakes. They freeze perfectly, pop them in the microwave and you can have a healthy warm breakfast! Give them a try, and let me know how you like them!

Berry Cheesecake


There is something about individual dessert that I really like. Maybe portion control, maybe not wanting to share, maybe not liking someone digging into my food.  At the end, I simply enjoy my and only my dessert.

That’s why I made this tasty cheesecakes in indivisual ramikens. Everybody gets to enjoy their share. Not one slice bigger than the other, not one scoop bigger than the other in a sharing dessert and best of all, no one trying to eat faster than others because before you know it, it will be gone!

All the ingredients are special in this cheesecake, together they make a bomb full of flavor! The berries with the lime, the macadamias with the graham and the creamy cheeses that tightens all the flavors together. Mmmm..

Squared Pecan Pie


Over the holidays I got this beautiful squared ceramic oven safe pan and I just couldn’t wait to use it for the first time! Luckily, my son Luis’ birthday is TODAY! So I had the perfect excuse to bake with it.

He is not much of a cake fan, but as the rest of the family, he is a huge fan of pecans. So I baked this pecan pie for him. Smells delicious, looks delicious and taste delicious!

Pecan pies are easy to bake, the crust is the only that takes a little time because you have to chill it for a bit, but is very easy too. This crust you may use it for any kind of pie, tart, rustic tart or pastry.

Christmas Eve


Let’s not forget the main celebration of Christmas: the celebration of the birth of Jesus. God gave us the greatest gift of all, his own son. Jesus, the prince of peace, would grow to show us the way of life, the pathway to God, and eternal life.

And yes, I believe that it is time to make peace with ourselves and with those around us to show that we care about them. This involves getting together, having delicious food, and giving gifts.

Today I am preparing a very easy last minute dessert that is delicious and healthy (yes, you read right: healthy!). It only requires strawberries, yogurt, and pecans. This dessert looks so pretty and tastes like a little popsicle full of flavor. Prepare them ahead of time and stick them in the freezer.

December the 12th


We are all into Christmas Spirit, it will be here before we know it! Can’t wait to see, chat and share precious moments with all my loved ones. But before that, today is December the 12th and it is the day we celebrate The Virgin of Guadalupe “The Patroness of Mexico”

A little bit of history, The Virgin of Guadalupe appeared to the indian Juan Diego when he was on his way to look for help for his sick uncle. The Virgin told him his uncle was already healthy. She asked him to go up the Tepeyac Hill where he would find some roses, a place and time of the year they didn’t grow. Then take the roses to the Bishop as a testimony of her appearances and ask for the construction of a temple. So Juan Diego went to the bishop and the Virgin revealed an image of herself on the apron where he had been carrying the roses. This was the fourth time The Virgin of Guadalupe appeared to Juan Diego. Since then, December the 12th 1531, we celebrate the miraculous act.


I’m sharing with you these easy, healthy little sweets. Because we all need a little bit of sweet in our lives, who can deny that? They are so delicious. Just good ingredients in them. No added sugar, gluten-free, vegetarian, healthy, no bake, simple and you can cover them with your signature coating, here I give you some ideas.

Flan for tonight



Meet my little puppies, Romulo and Rhea. Romulo a 7 year old short hair Chihuahua. Rhea a 6 years old half short hair-half long hair Chihuahua. Both in honor to my hometown, haha! They are so spoiled, so intelligent, they are always making their way to get a treat. With the cold weather, they don’t like to go out, Rhea immediately starts crying and Romulo starts shaking. I love to watch them lay by the sun or by the fire-place while I’m cooking. So…Flan for tonight? This recipe y so, so easy and delicious. This time I’m adding coconut and pecans, this is optional but I bet it will come out even better!
