Arroz con Pollo (Chicken with rice)

I remember when I was a little girl coming home from school and finding out my mom had cooked this dish that I absolutely enjoy. It’s been a long time since I had it, and I just follow my instincts to make up this recipe. It was delicious! And brought me many very nice memories about having lunch with my family.

I remember my mom picking my little sister and I from school, stopping by the tortilleria (they barely exist anymore, you can buy them at the grocery store now). And just couldn’t wait to get home to have a rolled freshly made tortilla with butter. Then waiting for my father to come home and have lunch all together. As soon as my father came home, we all sat at our round table and just as my mother serve us all some lemonade to star eating, my little sister would spill it all over the table.  My mother had to clean up the mess and we were still waiting to eat our delicious meal. Finally it was time to enjoy what my mother had prepared. I laugh now, but at the time I remember being frustrated to wait so long to have my meal just waiting and running all around the kitchen waiting for my father to come from the office. And this was our every day story.

Shrimp Ceviche

Ceviche is a mexican dish very common of the coast. You can make it with any kind of fish or seafood. The fish/seafood is cooked in lime juice, but I prepare it with fully cooked shrimp. It is very refreshing as it is served cold. Perfect for a hot summer day! I love it, it is so light and flavorful. Very easy to make, just let it time to marinade and the flavors combine.

It makes a great appetizer or main dish. Serve it with come crackers or corn tostadas; over avocado, the creaminess of the avocado pairs excellent with the bold flavors.

Parmesan Chicken Fingers

This is a great way to “bread” chicken fingers without actually using bread! Tha parmesan provides a delicious crust cover for the chicken fingers.

Very easy to make for a quick lunch or dinner. Serve them over a salad if you want to be super healthy. Serve it over pasta, rice or steam vegetables.

I’m feeling a little bit frustrated. I just spent one hour and thirty minutes trying to make a copy. Only to find out that this paper is too big and it doesn’t fit in a regular scanner. Why they don’t say it from the very beginning and save me all that time! So I came back home, took a picture of it and printed. Came out pretty good. Hope I had thought about that from the very beginning and I would have saved me all that time.

Something refreshing that is perfect for spring. Easy, simple and full of flavor.

This recipe came out of the blue, and I really, really liked it. It has all the ingredients I like. As all my recipes it is simple, easy and delicious. The aromas while cooking and while eating are so great, I barely waited to be ready!

Plenty of vegetables, you can have your dinner prepared all at the same time. Better, slow cooker will do it for you!

Regular Bun, Thin Bun or No Bun!

Today I cooked this absolutely delicious steak burgers! When I cook burgers at home, I like to have them without the bun, with cheese on top and some avocado slices. My husband had it with a thin bun, but this part is completely up to you.

This time I used two kind of cheeses. I topped it with gorgonzola cheese and then layered a thin slice of mild cheddar to cover the gorgonzola, I really liked it! Don’t forget about the avocado. Mmm! Just delicious!

Mini Meatloafs with a Mexican Twist

This mini meatloafs are just a little bomb of flavors! So good I know you’re going to become a fan of them! Very healthy lean ground beef and special combination of vegetables, all natural, lined with a thin slice of prosciutto just delicious! They have a mexican twist with the jalapeño pepper. I added flaxseed instead of bread crumbs, I just loved how they came out!! They freeze perfectly, so you can make a big batch and have them ready when you need them.
