Chicken Salad

This is kind of my version of the traditional Waldorf Salad. I like it so much because it is so simple and it can be prepared ahead of time. All of its ingredients are delicious and creates balance between them. I don’t use apples, instead, I use black seedless table grapes, they are so sweet that add a very nice flavor to the salad. And for the crunchiness I add jicama. This is another recipe where I integrate mexican ingredients to a traditional american dish.

Jicama is a root originally form Mexico. It has a very fresh and crunchiness consistency. It is very low-calorie and it is a very good source of fiber.

Mushroom Risotto

Continuing with the gluten-free diet, we (my son and I) prepared risotto. And OH! my, this mushroom risotto was so, so, so good. The porcini mushrooms give the risotto such a concentrated flavor that is very hard to resist. I noticed, that it is not a high calorie dish. If you prepare it the way I tell you here, stirring and letting the rice slowly cook and naturally become creamy. There is no need to add any cream, which is where the high calories come from. I know risotto is going to become you favorite dish from now on!

Chimichurri

This time I prepared this wonderful little lamb chops and I made a chimichurri sauce that goes perfectly with grill stake. Chimichurri is a green sauce that comes from Argentina. Originally it is prepared with parsley, but I used cilantro instead. It is delicious and it is the easiest sauce to prepare, basically you just throw all the ingredients in the blender and ready!!

Cauliflower Crust Pizza

Gluten Free Apple Bread

My son is visiting! So excited! He loves to cook, bake and everything related. He’s been following a gluten-free diet for about a month now, will see how that turns out. Meanwhile, we had a great time baking this delicious apple bread. We made some little mistakes, like mixing up tablespoons with teaspoons, but it didn’t matter because it smelled and tasted wonderful anyway.

We had this bread for breakfast with a nice cup of coffee, we also had it for dessert with a little spoon of ice cream!

He found in the internet a mixture of flours to replace wheat flour. So you can transform any baking good to gluten-free. It was interesting all the way from the grocery store to the tasting. Just delicious and above all, building good memories!

Cilantro Pulled Pork over Polenta

Polenta is the new addition to my menu! I wanted to try it for so long, I didn’t even know what it was!? Well, to my education, it is just corn meal coarse grind. I was so surprised that being a Mexican, and corn being such an important part of our diet, we Mexicans do not prepare this kind of dish, or at least me and nobody around me don’t, it comes form the northern part of Italy. Its flavor is so mild that you can give any flavor you wish, depending what you want to pair it with. This time, I prepared without any addition, since I wanted to taste its true flavor. But I think you can add any spice and also you could add any sharp cheese. It might become americanized since traditionally it is served plain.

I prepared a pulled pork with a cilantro enhanced flavor and paired perfect with the polenta. Combination of cultures!!

Sushi!!

 

So I embarked myself into make sushi! It turned out to be very easy to make. I decided to make a vegetarian option with just fresh vegetables, carrots, jicama, cucumber, radishes and a hint of fresh ginger. The other option I made it with shrimp and avocado. I also used brown rice! Well, I had two judges (two of my children) and they loved them, so that means they were great!!

Red “Pesto”

I wanted to make a red version of a Pesto, so I came up with this combination of flavors that were absolutely delicious. You can pair it with Poultry, fish, simple toast or pasta just as I did this time. It is the easiest to make too. Just throw all the ingredients in the blender (or if you have a food processor much better), and done!

Dry Rub Pork Ribs

Slow cooker is the best! This ribs are delicious and so easy to cook. Marinate them over night, and the next morning all you have to do is brown them, put them in the slow cooker and it does everything for you. I really like the process of slow cooking, it lets flavors penetrate deep into the meat, the meat remains juicy and it becomes so tender. Delicious! This time I prepared them with paprika to give them a spicy flavor and served them with some beans, some slices of avocado and a cauliflower “stake” (Stay tuned for that recipe too!).
