I was looking for a gluten-free muffin to bake, these came out more than I was expecting. The lime zest make them so refreshing and the baked blueberries just pop in your mouth like a little balloon of flavor! So good! I like to bake muffins because they are the perfect portion. Don’t have to worry if one slice is thicker than the other. They freeze perfectly, so you always have a quick breakfast ready or a perfect munch with your coffee for a snack.
LIME-BERRY CORN MEAL MUFFINS
2/3 Cup Corn meal
2 Cups Almond Flour
2/3 Cup Sugar
1 Cup mixed berries (I used blueberries and raspberries)
2 Limes, zest and juice
Place butter and sugar in a medium bowl and mix until it becomes light and fluffy
Add rest of the ingredients and stir carefully until well combined
Divide the mixture into 12-16 muffin liners
Bake for 20-25 minutes until a tooth pick comes out clean
This is barely a recipe, more, is just an idea for a healthy delicious breakfast on a busy schedule. Just toast a slice of bread spread greek thick yogurt and top it with your choice of fruit. This time I used blueberries, they add the perfect amount of sweetness to the toast. If you want more. you could add a drizzle of honey. Enjoy!!
My son is visiting! So excited! He loves to cook, bake and everything related. He’s been following a gluten-free diet for about a month now, will see how that turns out. Meanwhile, we had a great time baking this delicious apple bread. We made some little mistakes, like mixing up tablespoons with teaspoons, but it didn’t matter because it smelled and tasted wonderful anyway.
We had this bread for breakfast with a nice cup of coffee, we also had it for dessert with a little spoon of ice cream!
He found in the internet a mixture of flours to replace wheat flour. So you can transform any baking good to gluten-free. It was interesting all the way from the grocery store to the tasting. Just delicious and above all, building good memories!

This morning I just needed something sweet for breakfast. These pancakes came out amazingly good and filled up my sweet tooth with out going over the board with sugar and without adding any artificial sweeteners either. So they were very satisfying. Enjoy!
How about this delicious breakfast!! This is a healthy loaded potato. Swap the regular potato for a sweet potato, which have fewer calories and more fiber. Then prepare some scramble eggs with spinach and there you go! You have a healthy topping. This is so good! The sweetness of the potato, the bitterness of the spinach, saltines of the egg and I added a little bit of this awesome hot chilli sauce that my son brought me from Hatch (great place well known for growing beautiful tasty chillies)! You have an explosion of great flavors in your mouth! Just Delicious!
