Lime-Berry Corn Meal Muffins

I was looking for a gluten-free muffin to bake, these came out more than I was expecting. The lime zest make them so refreshing and the baked blueberries just pop in your mouth like a little balloon of flavor! So good! I like to bake muffins because they are the perfect portion. Don’t have to worry if one slice is thicker than the other. They freeze perfectly, so you always have a quick breakfast ready or a perfect munch with your coffee for a snack.



2/3 Cup Corn meal

2   Cups Almond Flour

2/3 Cup Sugar

3   Eggs

1   Cup mixed berries (I used blueberries and raspberries)

2   Limes, zest and juice


  • Place butter and sugar in a medium bowl and mix until it becomes light and fluffy
  • Add rest of the ingredients and stir carefully until well combined


  • Divide the mixture into 12-16 muffin liners
  • Bake for 20-25 minutes until a tooth pick comes out clean
  • Simply delicious!




Toast topped with Greek Yogurt and Blueberries

This is barely a recipe, more, is just an idea for a healthy delicious breakfast on a busy schedule. Just  toast a slice of bread spread greek thick yogurt and top it with your choice of fruit. This time I used blueberries, they add the perfect amount of sweetness to the toast. If you want more. you could add a drizzle of honey. Enjoy!!

Artichokes from my garden!

Have you seen an artichoke flower fully bloomed? I’ve been saving this post so I can show you how beautiful an artichoke flower is. I harvested some artichokes from my backyard and I left one so it could bloom and I could admire such a beauty. I documented on pictures how it was changing. It actually took 3 weeks from the first picture you see to the last one I took. So Admire this amazing flower in its blooming stages.

Talking about food, in this case artichokes, I prepared hearts of artichokes with a mexican twist. Artichoke is low in calories, rich in fiber and antioxidants, minerals, and helps lower cholesterol. I am so glad I grow this beauty in my backyard. And I gave myself this flower as a gift for my 100 post!! Can’t believe it I have enjoyed blogging so much!!

Tomatillo Panela Salad


This is a salad that is perfect for this spring days. Very refreshing!  Panela is a white, light, fresh cow’s milk cheese. Combined with tomatillos, cilantro and lime juice becomes a delightful salad or a great appetizer. Serve it over corn tortilla chips and top it with salted yogurt.

Salmon with a Horseradish-Dill Sause



I’m feeling a little bit frustrated. I just spent one hour and thirty minutes trying to make a copy. Only to find out that this paper is too big and it doesn’t fit in a regular scanner. Why they don’t say it from the very beginning and save me all that time! So I came back home, took a picture of it and printed. Came out pretty good. Hope I had thought about that from the very beginning and I would have saved me all that time.

Something refreshing that is perfect for spring. Easy, simple and full of flavor.

Berry Cheesecake


There is something about individual dessert that I really like. Maybe portion control, maybe not wanting to share, maybe not liking someone digging into my food.  At the end, I simply enjoy my and only my dessert.

That’s why I made this tasty cheesecakes in indivisual ramikens. Everybody gets to enjoy their share. Not one slice bigger than the other, not one scoop bigger than the other in a sharing dessert and best of all, no one trying to eat faster than others because before you know it, it will be gone!

All the ingredients are special in this cheesecake, together they make a bomb full of flavor! The berries with the lime, the macadamias with the graham and the creamy cheeses that tightens all the flavors together. Mmmm..

Soaked Oats


I’ve been working at home cleaning and getting rid of many things in my closets. Oh! It is unbelievable how such a small space can storage so many things! So it has been almost like a work out! climbing up and down the ladder, reaching up and down for boxes and suitcases. Carrying things from one place to another and still I have to put everything back in place. So last night I was thinking I needed a special kind of breakfast so I could have a boost in my energy and don’t give up on this command that I decided to undertake. Go for oats! I thought.

Oats are very healthy and they are even more heathy when raw. Cooking alters the structure of the food we eat and most of the time reduce its nutritious value. Raw oats gives you almost 5 times more energy, protein, fiber, minerals (such as calcium, iron, phosphorous, potassium and magnesium) and vitamins. Isn’t it incredible how much is lost in the cooking process? Besides, I think they are better raw than cooked, I like more their consistency when soaked. So simple and easy, just throw everything in a container, and put it in the fridge the night before.

Christmas Eve


Let’s not forget the main celebration of Christmas: the celebration of the birth of Jesus. God gave us the greatest gift of all, his own son. Jesus, the prince of peace, would grow to show us the way of life, the pathway to God, and eternal life.

And yes, I believe that it is time to make peace with ourselves and with those around us to show that we care about them. This involves getting together, having delicious food, and giving gifts.

Today I am preparing a very easy last minute dessert that is delicious and healthy (yes, you read right: healthy!). It only requires strawberries, yogurt, and pecans. This dessert looks so pretty and tastes like a little popsicle full of flavor. Prepare them ahead of time and stick them in the freezer.
