Flourless Almond Macadamia Muffins


It has been a while since I don’t bake. It is snowing and gray, so with this kind of weather I’d love to have a hot cup of coffee with a nice nutritious muffin.

Yesterday morning  my little puppies ( I have two 3 lb Chihuahuas) were urging me to take them out. They didn’t understand it was cold and snowing. It was so cold that Rhea didn’t want to step outside the door mat and Romulo who is more adventurous, walked about 6 feet away when he started limping on one leg and then another leg and before he could come back to the mat he wasn’t able to walk. This happen in a matter of seconds. I carried both of them and went in side. They spent the rest of the morning next to the fire-place.

This muffins are delicious! Only good things in there like almonds, macadamias, coconut flakes. They freeze perfectly, pop them in the microwave and you can have a healthy warm breakfast! Give them a try, and let me know how you like them!

Cafe de Olla – Coffee from the Pot


Cafe de Olla is a traditional hot drink from Mexico. Tells the story that during the Mexican Revolution, the “soldaderas”, women who helped with the revolution, used to prepare this special drink on bonfires for their soldiers to comfort them and give them strength.

It is called coffee from the pot because it is prepared by boiling the coffee, spices and piloncillo (the purest or least refined form or sugar cane) in a pot. Usually a clay pot. Some people add clove and different kind of fruit. But the recipe here is the way I like it the most.

It is such a delicious beverage not only for its flavor, but for its aromas full of sweetness and spices, that it has turned into a traditional distinctive mexican drink. A Coffee that tastes and smells like Mexico…

Different kind of tacos!


Because Luis and my husband Ricardo are home and I know they LOVE mexican food, I’m preparing this meat recipe for tacos. It is very flavorful, comfort food perfect for the cold weather! This kind is pulled beef with new potatoes in fresh tomato sauce. Very easy prepared in the slow cooker so you can enjoy family time!

All you need to do is season the meat, put it in the slow cooker and pour blended tomatoes. Go to the movies, go for a hike, or watch football with your family while it cooks!

Serve it with some vegetables, avocado, rice or beans, and if you are brave enough, go ahead and try the serrano chili that gave its wonderful flavor to the meat!

Gloomy Day


It is a cloudy, gloomy day. It is getting colder and tomorrow it is supposed to snow. So what a better day for baking and let the good kitchen aromas brighten my day?!

I’ve been meaning to bake some nice morning, nutritious, breakfast muffins. I came up with this idea and it turn out so delicious, it made my day! You know, only the best is in here, coconut oil, flaxseed, bananas, raspberries… Bet you cant wait to try them.

This can be a perfect Christmas morning breakfast! They freeze perfectly, can be made ahead of time, and microwave them just before serving.

Comfortly Delicious


The recipe I’m sharing today is perfect for the season. A soup is always well received on a cold day. This creamy sweet potato soup is just “comfortly delicious”. Comfort food always make you feel warm in the inside, your tummy and your soul. A taste of home.

I was so excited to make this soup because of the combination of all different flavors, the aroma, the silky texture, so good. It pairs perfectly with a salad or sandwich for lunch. It works as an appetizer either on a regular daily dinner or that special event that you might have. And of course, very easy and simple to do.
