I like to have a nice warm bowl of soup when it is cool cloudy outside. It seems to be leeks season, so I decided to do something delicious with them.
I’ve mentioned cabbage have many health benefits like anti-inflammatory, antioxidant, cancer prevention, digestive tract and cardiovascular support. In addition to the health benefits, both leeks and cabbage, are a low carb vegetable and contains fiber, so I guess we should include them more often to our diet. They pair very well, so enjoy this comfty easy to prepare soup.
CABBAGE LEEK SOUP
Ingredients
1 Cabbage head
2 Large leeks
2 Garlic cloves
1 Tablespoon Olive oil
1 Tablespoon Butter
5 Cups of water
Salt and Pepper to season
Directions
- Thinly slice cabbage and leeks
- Heat olive oil and butter in a saucepan. The olive helps the butter not to burn
- Crush the garlic and add it to the heated oil and butter
- Stir and cook for 30 seconds, garlic burns easily
- Add Cabbage and leeks
- Cook for 5 minutes stirring occasionally
- Add water season with salt and pepper
- Cover and boil for 5 more minutes
- Garnish with some chopped panela cheese
- Enjoy
Looks yummy! I have never heard of panela cheese before. I hope I can find it here in Canada so I can try it. 🙂

Queso panela is a fresh, salty, low fat cheese that does not melt, mild in flavor. I love it hope you can find it 🙂
