This is a delicious vegetarian stir fry packed with vegetable protein. I used sun-dried tomatoes that gave it a very nice flavor, and from there, be creative! You can add the vegetables of your choice. This time, I prepared it with mushrooms and spinach.
QUINOA STIR FRY
Ingredients
1 Cup dry quinoa
2 Cup fresh spinach
8 Mushroom
1 Egg
1 large garlic clove
2 inch fresh ginger root
6 Sun-dried tomatoes halves in oil
1/4 Onion
Salt and pepper to taste
Siracha for garnish and a little heat
Directions
- Cook quinoa according to package instructions
- Slice mushrooms
- Chop garlic, onion and sun-dried tomatoes
- Grate fresh ginger
- In a large sauce pan sautee onion, garlic and sun-dried tomatoes
- Add spinach and mushrooms
- Move vegetables to a side and cook a beaten egg
- Stir to combine
- Add cooked quinoa
- Season with salt and pepper
- Garnish with a few drops of siracha
I desperately need this healthy delicious food to detox after all the partying going on this entire month.
