Pesto is sooo easy to make! So delicious, so healthy, and so versatile! Obviously you can toss it with pasta, but It is not only for pasta, you can top fish, poultry or a lean stake. Besides using it as a spread on a simple toast or use it instead mayo in your sandwich, oh! it gives such a nice flavor!! Scroll down and you’ll see a photo of my spaghetti squash al pesto and also a delicious sandwich that I made with fresh tomato and mozzarella. Mmm…

PESTO

Ingredients

OLYMPUS DIGITAL CAMERA

1 Cup fresh basil leaves lightly chopped

1/4 Cup pine nuts

1 Garlic clove

2 Tablespoon grated parmesan cheese

1 Tablespoon olive oil

Juice of half a lemon

 

Procedure

  • Put all the ingredients in a food processor until well blended and turns into a soft paste

  • Done!

  • Perfect for pasta or spaghetti squash, like this:
